GREEN ASPARAGUS SOUP

› 1kg green asparagus
› 1l fresh vegetable stock
› 1 teaspoon sugar
› 250g creme fraiche
› 250ml cream
› freshly ground pepper
› little bit of salt and chervil
Preparation of the asparagus:
Wash the asparagus, cut away the tough parts with a knife, cut into small pieces and boil with sugar and the vegetable stock.
Cut the chervil and put it with the other spices into the fond - let it boil for about 15 minutes.
Put the asparagus spears aside, purèe the aspargus and the chervil in a pot, sieve it through a hair sieve and flavour with salt and pepper.
Add creme fraiche and half of the cream and let it boil. Whip the rest of the cream and decorate with the asparagus spears.
Our tip: caramelize the spears - it takes no more than 5-10 minutes! Heat some sugar in a pan until it turns golden yellow and liquid, add the spears and some butter and sautée at low temperature until the spears are covered with caramel - yummy...
